Recipe: Sardinian Fregola with Cherry Tomatoes and Gorgonzola Cheese

It is a real Mediterranean dish this Fregola with Cherry Tomatoes and Gorgonzola Cheese. Fregola is a typical pasta from Sardinia  and now it is possible to buy it in UK  in most delis and also in Borough Market for who lives in London. Few ingredients and very easy to prepare.
You will need Extra Virgin Olive Oil, I have used Tamia Oil which is fantastic and you can buy it directly from the producers next week at Welcome Italia 2019, Black Olives, Cherry Tomatoes, a Red Onion, a bag of Fregola and Gorgonzola cheese.
First of all slice the red onion as you prefer, thin or thicker depending on your taste, then cut in quarters the cherry tomatoes, and in halves the olives, season with some pepper, salt and 4 tablespoons of Tamia Extra Virgin Olive Oil. Leave it  in a salad bowl, quite capacious to gain flavour.
Cut the Gorgonzola cheese in cubes and leave it in a small bowl. You will add it at the end.
Meanwhile put to boil a pan of broth ( you can use stock cubes as well) and when it start to boil pour the fregola and cook for 18 minutes like you would cook pasta.
When the fregola is cooked drain it and pass it under cold water to block the cooking.
Add the fregola to the bowl with the tomatoes and the onion and mix to even all the ingredients. Then add the Gorgonzola cheese and mix again. It is a perfect dish to bring at work or to be prepared the day before so it will gain more flavour. When you serve it drizzle a bit of Tamia Extra Virgin Olive Oil.
