Recipe: Pasta with Mussels and Potatoes


We are indoors, trying to stock up on food and not be bored by a lack of creativity in the kitchen. So start looking in your cupboard and see the ingredients you have. This recipe is made using potatoes that are still available in stores and a jar of mussels in brine. If you want you can use different kind of pasta, you know the end of a packet that you might not use because it is not enough for a meal.
We will need, Extra Virgin Olive Oil, Garlic, Chillies, Potatoes, Pasta (any shape), Parsley, I had some parsley I had frozen because it was a lot, Pecorino Cheese and a jar of L'Isola d'Oro Mussels in brine.


Heat up in a wok the Extra Virgin Olive Oil with the garlic and the chillies. Don’t let the garlic burn though. 


Dice the potatoes in small little cubes so they will be easier to cook and add them in the wok.


Add the water from the mussel jar and cook the potatoes. Meanwhile you have put a pan of water to boil, added salt and cooked the pasta.

Once drained add the pasta in the wok and stir well. I have used  a pack of wholemeal pasta but any is fine.

Add the L’Isola d’Oro mussels and stir just for few seconds if not they become too rubbery, and also to spread them out so that everyone is going to have the right portion of seafood and potatoes.


Quickly add the chopped parsley and stir it well.
Add a generous sprinkle of Pecorino Cheese, a last stir and it is ready.
Ready to eat, sprinkle some more Pecorino, because we like flavour and enjoy. www.lisoladoro.it
