Recipe: Salad with Tuna Fillets and Potatoes

Let's have another of those comfort, store cupboard food that it takes nothing to prepare and also it can be done the previous evening so that you can pack it for lunch. The tuna fillets and potatoes salad is full of everything you need for a balanced meal, with proteins, vitamins, carbo and the good fats. I have used the Tuna Fillets natural  with ginger for that extra punch by L'Isola d'Oro, an Italian brand specialised in fish preserve  that has started to be quite popular here in UK and that you can find at Fratelli Camisa online, as well as other products from this excellent label.
You will need Potatoes, Cherry Tomatoes and Red Onions, quantity depends on how many you are and how much salad you want to prepare. I've used these organic veggies by Neat Organic, a jar of L'Isola d'Oro Ginger Tuna Fillets in brine, Extra Virgin Olive Oil by Bono and a mix of salt and herbs to grind.
While you start boiling the potatoes in water with rock salt, you can prepare the other veggies to be put in a serving bowl.
Wash and cut in quarters the cherry tomatoes.
Add the red onions cut in thin slices and the Tuna Fillets that being in brine they have this ginger flavour which gives a special taste to the salad.
When you can pierce the potatoes with a fork, they are ready, so you will drain them and peel them. I always pierce the potatoes while I peel them so that I won't get my fingers burnt.
Add the potatoes to the salad, drizzle a fair amount of Extra Virgin Olive Oil, grind the salt and herbs and you can serve this delicious warm salad for dinner. Make more so you can take it with you at work, saving money and eating something healthy. www.lisoladoro.it
