Capreolus Fine British Charcuterie
I've discovered the cured meat by Capreolus, a Latin name, an Italian style cured meat, but 100% British, owned by a family who produces all these delicious products using traditional methods. From the Smokehouse in Rampisham, Dorset, a huge range of high quality products are sold online and also delivered to shops, farmers' market and other food events. In London Borough Market and Selfridges stock all these goodness.
This is "Guanciale" which is the pork's cheek. This is the most important ingredient for the "Amatriciana" pasta, we can use normal "pancetta" but purists swear by the Guanciale and it is not easy to find it. Capreolus has found a gap in the market and now, even if we don't live in Italy close to a deli shop where this kind of cured meat is sold, we can have the perfect "Amatriciana" with the Guanciale from Capreolus.
These are some of the cured meat packs available from Capreolus. We've got Pancetta which is great in order to cook a perfect "Carbonara" (please don't use cream), there is Bresaola, perfect for a quick carpaccio, just add some extra virgin olive oil, Parmesan cheese shavings and rocket and other specialities that only writing about them makes me feel hungry.
This white block is "Lardo" or lard and this particular kind has been infused with truffle. This Lard is not for cooking but it is a delicacy from some areas in Italy both in the North and the Central part of the country. This kind of lard has to be wafer thinly cut , it has to be almost transparent and you can eat it like a slice of raw ham. It is perfect rolled around a bread stick or served as a starter with other cured meats for a rustic style lunch, dinner or brunch.
This is "Coppa" which is the neck fillet of the pork, in this case free range pigs from Dorset and Devon. Capreolus source all the meat locally and the result is terrific. I can assure you that the taste and the flavour are absolutely great and if you go online you can see that the prices are very reasonable, some of them matching the prices of an average supermarket, only that the quality is superior.
A foodie will always look for the best ingredients and Capreolus can provide chefs or food lovers with the best in cured meat. Pancetta in UK is very popular and we find mainly cubed pancetta in supermarkets. But the real food lover will look for pancetta in one piece to be cut depending on the recipe. As you can see Capreolus stocks segments of pancetta that can be sliced or chorizo salami for cooking. Let's say that all the Mediterranean cuisine can have the original flavours from Capreolus products.
