Recipe: Salmon Fillets with Pistacchio Flour

This recipe is so quick and easy and the result is delicious. Salmon fillets coated in pistachio flour and oven baked, with a side dish of boiled potatoes. If pistachio flour is not available you can blitz some pistachios in a blender to ground them. But let’s see what we need.

Take Salmon Fillets, Pistachio flour, or pistachios grounded, baby potatoes and I have used this Spray Leggero, a light spray of Extra Virgin Olive Oil infused with orange and Black Pepper by the company Fratelli Mantova. This company produced a great selection of sprays for cooking with a huge choice of flavours. Profit now that we are still in the European Community because they can ship their products here for the moment.

While you put the potatoes in a pan for boiling them, start skinning the salmon fillets.

Dice them and then spray the Extra Virgin Olive Oil infused with Orange and Black Pepper on all sides of the fillets.  This action will keep the pistachio flour in place, as well as giving the salmon a nice flavour.

The salmon fillets are now ready to be coated in pistachio flour.

In a small bowl put the pistachio flour, or grounded pistachios and coat evenly the diced salmon fillets.

Line with parchment a baking tray and put the salmon diced and coated and bake them  at 240/9 for 15 to 20 minutes.

Ready to eat, just add the boiled baby potatoes, spray them with some  Spray Leggero for a flavoured twist and enjoy the crunchy on the outside and soft on the inside of this very quick dish.
