Recipe: Mackerel, Avocado and Feta Salad
Autumn is here but we still don't want to think about it and we try to hold on to our summer feeling even with food. So given that the weather is still mild, I have made this colourful and delicious salad, packed with vitamins and proteins.
We will need some pitted Black Olives, Plum Tomatoes, a Red Onion, an Avocado, some Feta cheese, Lemon Juice or the juice from a lemon, Tamia Balsamic Vinegar and Grilled Mackerel Fillets in olive oil by L'Isola d'Oro that you can find at Fratelli Camisa.
Roughly chop the red onion if you like its flavour if not finely chop it so that you won't have big pieces of onion while you are eating.
Chop and drizzle with lemon juice the avocado so it won't get darker and also cut in quarters the plum tomatoes.
Ina small bowl put the oil from the Mackerel jar, add some balsamic vinegar, salt and pepper and whisk the dressing.
Combine all the ingredients, crumbling the feta cheese, cutting in half the black olives, flaking the mackerel fillets and at the end drizzle the dressing over it. Enjoy this still very summery salad, great for dinner and to take at work for your lunch break. www.lisoladoro.it
